This is a really simple, chuck-it-all-in kind of meal that can be made using staple cupboard ingredients. Perfect for those evenings when you want something tasty but can’t be bothered to be creative!
SERVES 5- COOKING TIME: 25 MINS
Ingredients:
- 750g-1kg of pork mince, depending on how big your portion sizes are
- 2 tsp sesame oil
- 2 tsp light soy sauce
- a decent sized wedge of ginger, peeled and crushed in a pestle and mortar, or finely sliced
- 4-5 garlic cloves, finely sliced
- 2 chillies, red or green, finely sliced
- 5 spring onions, trimmed and sliced, separating the white and green parts
- 2 tbsp dark soy sauce
- 2 tbsp fish sauce
- 2 tsp sugar
- OPTIONAL- 1 heaped teaspoon chilli flakes (my chillies weren’t spicy at all so I needed an extra kick)
- vegetable oil

Method:
- Begin by mixing the mince along with the sesame oil and the light soy. Leave this to marinate just as long as it takes you to prepare the other ingredients.
- In a wok, or large pan, heat a glug of veg oil over a medium heat. Once hot, add the garlic, whites of the spring onion, ginger and chilli. Gently fry until everything is softened.
- Add in the pork mince and break everything up in the pan, making sure everything is moving around and nothing is sticking. Once the meat is browned, pour over the remaining sauce ingredients and the sugar. Give everything a good mix together. Let this cook for a further 4/5 minutes.
- Just before turning off the heat, add in the green parts of the spring onions. And voila! Serve hot over some fluffy rice and with any veg you fancy on the side (I steamed up some green beans).
